I just wanted to share a recipe with you for a swedish dish called krabbelurer. It is like a pancake but thicker:
1 egg
3/4 cup sugar
3/4 cup milk
2 1/2 cup flour
1 teaspoon baking powder
1 teaspoon vanilla
butter to fry
Do this
Beat eggs and sugar lightly foamy. Add the milk, then flour and vanilla. Stir thoroughly until the batter is completely smooth.
Take a frying pan and melt the butter over medium heat. Click the batter and bake krabbelurer in batches, 3-4 minutes on each side. Be carefull...because nothing will happen for a while and you will get bored and then when you look again they are burned... (ask me how I know :-)) )
Serve them warm with whipped cream and jam.
It is nice for brunch and lunch.
